When people hear catfish, they become almost immediately put off. *gyesh, that Slimy thing*
Catfish Peppersoup is a Nigerian dish, enjoyed by all parts in Nigeria. It doesn't have a particular or specific origin.
I personally love catfish pepper soup, and the manner in which I prepare it is quite different and no soul has ever said no to my recipe. I dare you to say otherwise!

Ingredients
1200 gram catfish
1 onion (mash)
Lemon grass(tear into bits)
Tetrapleura Tetraptera(Uhio)
Alligator pepper(ground)
2 Bay leaves
Dill
Spring onions(chopped)
Spices (curry, thyme, cumin and uziza powder)
2 tablespoon Pepper soup mix
3 scotch bonnets
1 tablespoon Cameroon pepper
2 fish seasoning cubes
Scent leaves (chopped)
Salt to taste
Guide,
Wash catfish properly, remove the gut and shit.
Fill a pot with water enough to cover the fish generously, place in the lemongrass and dill into the pot. Leave to simmer for 5 minutes and strain.
Add the onions, Uhio(Tetrapleura Tetraptera, Omilo, ground calabash nutmeg, alligator pepper, uziza, crushed garlic, bay leaf, stock cubes and some salt and allow to boil. Add in the fish again and stir. 10 minutes.
While the contents in the pot is boiling, add the pepper soup spice, and the chopped habanero pepper. Put the Cameroon pepper last after tasting the soup to know what you can handle.
Leave to cook for 10 mins, then add curry, cumin and thyme. Cook for another 7 minutes.
Cook till the fish is tender then lower heat to a simmer. Taste for seasoning and adjust accordingly.
Finally put in the scent leaf allow to simmer for 5 minutes. Put the spring onions last, and lightly stir. Turn off the heat, with the lid closed. After 3 minutes serve hot into a soup bowl.
Enjoy with bread, boiled rice, yam, plantain or on its own.
