African oil bean- UKPAKA (UGBA) SAUCE

UKPAKA SAUCE AND WHITE YAM

My god! A plate is never enough when you eat this dish, 'I want more' will be your mouth talking.

This finger licking dish should get you situated back home, a reminder of the good ol' Naija days. Cook for loved ones or friends, give them an insightful taste of Igbo cuisine.

Ingredients for 3 servings
Red oil
Ukpaka (oil bean seed)
1/2 tuber of Yam (peeled and sliced) 
1 teaspoon potash
Ugu leaves (vegetable) 
1 large roasted dry fish
Fresh pepper (mash)
1 medium sized onion bulb (cut)
1/2 teaspoon ground Uziza seeds (optional)
Salt  


Preparation
Cut and slice the onion vertically.
Wash the vegetables properly with salt, ugu tends to be very sandy, then slice.
Slice the yam into square chunks.
Set a pot on the stove, then add the sliced 
yam and some salt. 








Cook for 37 minutes or until the yam is tender. Run a fork through it to know.
Drain out the remaining water using a sieve and set the yam aside.
In a pan or small clay pot on the stove, set on low heat, put in 2 cups of red oil, onions, pepper, uziza seeds and some salt, mix well then add your vegetables, leave for 5 minutes.

Serve with white yam and fish. Welcome to the culture.
