Coconut Curry Sauce (gravy) with Chicken and Vegetables

Coconut Curry Sauce Ingredients:(Serving; 4)
– 1 chicken thigh and drumstick( a whole chicken lap cut into smaller pieces)
– 1 large Onion
– 2 large sized Carrot
– 1 green bell pepper(large)
– 1 red bell pepper
– 1 medium size can of cooked golden corn
– 1 handful green Peas(optional)
– 2 tablespoonful Curry powder
– 1 teaspoon Garlic powder(optional)
– ½ teaspoon Thyme
– ½ teaspoonful rosemary(ground)
– 1 teaspoon grated Ginger
– 2 stock cubes(seasoning cubes)
– chili pepper
– 2 tablespoonful Corn Starch (the type used for making pap/Agidi)
– One 14oz Can Coconut milk
– 2 tablespoonful Vegetable oil
– Salt to taste
Tip:
*You can use less veggies if you want to.
*You can Use corn flour or plaibaking flour
*You can add chopped potatoes to the veg
*you can use boiled potato puree as a substitute
*Salt depends on you, but less is more.
*Requires enough water, although it will still thicken when cold, don't put too much fluid.
*Use fish(freshly peeled Prawns, shrimps,crabs) or beef strips in place of chicken
Preparation:
1. Marinade the chicken pieces with salt, Curry powder, thyme, chili pepper, 1 stock cube and garlic. Set aside for later use.
2. Grate the ginger, and dice the carrots,then de-seed and cut the green&red bell pepper and onions. Set aside.
3.Combine ½teaspoon rosemary powder and remaining thyme into the coconut milk.
4. Now mix the coconut milk and corn starch together.
5. Heat up the oil, add the chopped onion and garlic;add the marinated chicken and stir fry to caramelize the onions and brown the chicken.
6. Now, add the coconut milk and corn starch mixture and simmer until it thickens. Then add the chopped carrots, green&red bell pepper and green peas. Add the grated ginger and mix thoroughly.
If the sauce is too thick , add a little water, add the remaining stock cube and salt to taste. Leave to cook until the chicken is tender and the veggies are well cooked.
Serve and enjoy with rice, pasta ,plantains or potatoes.
