Simple, Easy Cooked Yam and Ukpaka Sauce
There are three ways/methods in preparing this particular sauce, but whichever way its usually fresh and much tastier when eaten that way.
Now this recipe I’m sharing today is the first recipe I ever learned from my mom. And trust me when I say she makes excellent native meals. My mom makes the most mouthwatering native meals/dishes. Yes I said it.. Don't we all?
Well, Tomorrow will be the last day of August and the concluding part of the New Yam Festive season, as Most Igbo communities celebrate the New Yam Festival in the month of August. Although Its usually a hot steaming bowl of Yam and peppersoup. But let's put a cap on the month of August with this delicious, yet easy yam recipe.
*requires enough Onion, Palm oil, pepper and ugba. Don't be afraid to add more of one, two or all requirement. In Igbo land/communities food and management, can't relate. Tainku.
INGREDIENTS
1 large tuber of yam
4 wraps of Ugba/Ukpaka (sliced oil bean seed)
1 small wrap Ogiri (*Castor bean paste)(optional)
1 bunch Utasi leaves
2 large onion
Pepper (enough)
Salt to taste
200ml Palm oil
1 stock cube (DON’T USE CHICKEN FLAVORED STOCK CUBE)(*also optional)
PREPARATION
-Chop Utasi leaves and pound in a mortar
- If using fresh peppers grind peppers till smooth.
-Chop the onions
METHOD/INSTRUCTIONS
1) Peel and slice yam. Cook yam slices in water until soft. Drain water from the cooked yams and set aside.
2) Melt palm oil in a small pot. Add the chopped onion when oil is hot. Allow to fry for about 45 seconds.
3) Add the ogiri. Using a spoon mash it against the side of the pot and and stir to mix with the oil.
4) Season with pepper, salt and 1 stock cube if you wish.
5) Add the pounded utasi leaves. Add the ugba immediately. Stir. Allow for a few seconds and set the pot down.
Eat with cooked or roasted yam, vegetable, Dried Fish,etc
