Making Pepperish
(IGBO kwenu!)
Groundnut paste popularly known as 'Pepperish' originates from the eastern part of Nigeria, but is enjoyed by all. It's similar to Joley's or Nutella, only with pepper, lots and lots of pepper.
Pepperish are mainly reserved for occasions, especially During traditional weddings, Pepperish are a must. Garden egg and Pepperish go together like 5&6.
But 'no Shaking', You, yes you, can also enjoy this popular side of hotness with anything. The list is endless, trust me. At anytime too.
Here's how :-
Making Pepperish
4 Cups of groundnut
1 cup groundnut oil*
1 cup alligator pepper
Tatashe pepper
1 tsp Black Cameroon pepper(ground)
A pinch of salt
Before we begin, please note Do NOT add water, not even a DROP ! Water shouldn't come in contact with your hands or any of the ingredients. Make sure all ingredients are ground and dry.
*groundnut oil makes grinding easier, use instead of water.
**CONTAINS PEANUTS
Make sure groundnut/peanuts are roasted before hand, purchase those 'ready' roasted ones in bottles, or roast raw peanuts at home over an open pan.
You will only need a pinch of salt, or non at all.
Preparation
Instructions
Mix all ingredients together, until a paste consistency is formed. You can use an electric blender to speed up the process, and for a smoother texture. But it really doesn't matter, honestly, I prefer mine to have some texture.
In the East, pepperish is made by first roasting, then pounding the nuts and pepper together in a mortar and pestle/or stone, until a paste or purée forms. But that could take up to 4 hours of valuable time and energy.
We achieved this under 30 mins.
For traditional purposes, Serve with cola nut, garden egg.
I'm not supposed to say this, but Enjoy with a snack. Shhh....
I love the smell of freshly ground alligator pepper, do you too ?
I would have tried this out but I no like kitchen work again 😭
