HOW TO MAKE PARTY JOLLOF RICE FOR 20-30 PEOPLE

Today I will be showing you how I make my party jollof rice, I believe I already have a post on this. 'Today will be like an update
Ingredients
Tomato sauce
Tomato paste
Onions(Chopped)
Groundnut oil or *Chicken oil
Stock
Knorr Aromat
Thyme
Curry powder
Bay leaves
Seasoning cubes
Rice(use golden basmati sella rice)
In a big pot,
Pour a generous amount of oil
Get your oil, I prefer to use the oil that has been used in frying chicken or meat, but you don't have to do that.
You can also use a fresh one. It tastes yummier using chicken oil
Add in your chopped onions and stir for about 2 mins
Next add your DeRica(large) into the pot and allow to fry for 3-4 minutes. Then add your tomato sauce(see here) stir and add Knorr Aromat, pour in everything, and add in 4 cubes of knorr
Dry thyme goes in next use ducros or Tiger brand for best results, empty the whole bottle, then add curry powder, stir
Pour in the Chicken/meat stock, cover the lid and let it boil
While the stew is boiling, Prepare your rice (use golden basmati sella rice) one packet is about 2kg. Wash until water is no longer cloudy
Transfer the rice into the pot and mix using a wooden spoon
Taste and add more seasoning or chicken stock if needed
Add hot water from your kettle, pour enough water so that it encompasses the rice. Stir well and add in your bay leaves
Lower the cooker and cover the pot with a foil wrap and secure with the pot cover, let it cook for 10 minutes
Check the rice from time to time
Serve hot.
This rice feeds about 20-30 people

Tips:-
-You can use a gas stove, but firewood is much safer and tastier
-Let the rice burn just a little, as doing so adds a smoky yummy taste to the rice. Gives it that true party jollof flavor.
-Cover with a foil wrap to prevent evaporation and to keep the rice moist and separated
- Always, always add bay leaves into your party jollof rice, you simply don't want to exempt it.
Yes, that wooden spoon tip is a very useful tip. It prevents the rice from burning.
